Apple and Mixed Berry Crumble







  • INGREDIENTS:
  • 4 large cooking apples
  •  2 cups of mixed berries (blueberries, blackberries, raspberries and strawberries- can be fresh or frozen) 
  • 1 cup of rolled oats
  •  1 1/2 cups white flour
  • 2 cups vegan brown sugar
  •  1 teaspoon baking powder 
  • 1/2 - 2/3 cups vegan margarine
  •  1 teaspoon cinnamon (optional) 



 STEPS:
1. Preheat oven to 325'F (175' C) 
2. Peel, Core and slice the apples (not too small or they'll turn mushy!) 
3. Put the apples in a big bowl and mix in the berries 
4. Mix one cup of sugar into the fruit and mix (i like to add in 1/2 teaspoon of cinnamon here too) 
5. Place the fruit mixture into a 12 x 9 dish 
6.In a bowl, mix the oats, flour, remaining sugar, baking powder and cinnamon 
7. Gradually add the margarine and use your fingers to crumble the mixture together (no need to be too careful...the messier the better!)
8. Cover the fruit with the crumble mixture and I like to sprinkle some oats on top too 
9. Place in the pre-heated oven for 35 - 45 minutes(it depends on your oven)

Crunchy Deviled Chicken







  • INGREDIENTS:
  • 4 chicken legs (leg and thigh quarters)
  • ½ cup almond meal
  • 1 tsp curry powder
  • 1 tsp cayenne
  • 1 tsp dry mustard
  • 4 tbsp olive oil
 STEPS:

  1. 1. Preheat oven to 350ºF.
  2. 2. Cut drumsticks from thighs.
  3. 3. On a rimmed plate, combine almond meal with seasonings.
  4. 4. Rub each piece of chicken with a little olive oil, then roll in seasoned almond meal. Arrange in a roasting pan.
  5. 5.  Roast for an hour or so, until juices run clear when pierced to the bone, and the coating is crunchy

Prosciutto & Mint Wrapped Melon

  • INGREDIENTS:
  • ½ melon, skin thinly cut off, sliced to preference (cantaloupe)
  • 4-5 ounces of thinly sliced prosciutto
  • 1-2 tablespoons fresh mint leaves


 STEPS:

  1. Cut melon in half. Place cut side down on cutting board and cut 1 inch pieces of cantaloupe. The use a knife to thinly slice the skin away from the melon.
  2. Place melon pieces on a plate. Sprinkle with 1-2 small mint leaves (or thinly sliced mint leaves) then wrap a piece of prosciutto around the mint and melon. I used a whole piece of prosciutto but use as little or as much as you want.
  3. Repeat. Depending on the size of your melon, this will make 8-10 pieces of prosciutto wrapped melon.
  4. Garnish with extra mint leaves.

  • INGREDIENTS:
  • CRUST:
    3 cups Gold Medal® All-Purpose Flour
    1 tablespoon granulated white sugar
    1/4 teaspoon salt
    1/2 cup cold shortening
    1/2 cup cold butter, cut into pieces
    1 large egg, beaten
    7 to 8 tablespoons ice water
    1 teaspoon vinegar
    FILLING:
    3 to 4 cups sliced fresh strawberries
    10 large egg yolks
    1 cup granulated white sugar
    1/2 cup freshly squeezed lime juice
    1/2 cup tequila
    2 teaspoons grated lime zest
    1/2 cup (1 stick) unsalted butter, cut into pieces
    TOPPING:
    1 cup heavy whipping cream
    1 heaping tablespoon powdered sugar
    additional strawberries, for garnish (optional)
 STEPS:

1. Prepare the crust: In a medium bowl, whisk together the flour, sugar and salt. Cut in the shortening and butter until the mixture resembles small peas. In a separate bowl, mix egg, 7 tablespoons water and vinegar. Add to the dry ingredients and stir with a fork just until combined. Add another tablespoon of water if the mixture is still dry. Spoon out onto parchment or waxed paper and use your hands to mold together. Divide into two equal parts and shape each into a disk. Wrap with plastic wrap and refrigerate for at least 30 minutes (you can freeze the 2nd piece, if you'd like- since you'll only need one for this recipe). Preheat the oven to 350 degrees F. Roll the dough out on a lightly floured surface to 16-inch diameter round. Transfer to 9-inch diameter glass pie dish (not deep dish). Trim edges and crimp decoratively. Pierce crust all over with a fork. Bake until crust is golden- about 35 minutes. Let cool.
2. Prepare the filling: Place sliced strawberries in the cooled crust. In the top of a double boiler (see tips below if you do not have a double boiler), whisk together egg yolks, sugar, lime juice, tequila and zest. Set over simmering water and whisk constantly until the custard thickens and registers 170 degrees F. on a candy thermometer (should take 4 to 5 minutes). Be sure to continue mixing the entire time. If you leave the yolk mixture to warm by itself, it's going to want to begin turning into scrambled eggs! Remove the upper pan from the water and whisk in the butter. Cool slightly, then pour the filling on top of the strawberries. Refrigerate until the filling sets (3 hours or overnight).
3. Add the topping: Mix whipping cream and sugar with a mixer until thickened. Spread over the top of the pie. Refrigerate until ready to serve. Garnish with strawberries, if desired.
